Chicken Fajita Pizza


1 (13.8 ounce) can Pillsbury(R) Refrigerated Pizza Crust
1 tablespoon olive or vegetable oil
4 boneless skinless chicken breast halves, cut into thin strips
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onions
1 cup green or red bell pepper strips (2x1/4-inch)
1/2 cup Old El Paso(R) Thick 'n Chunky Salsa
2 cups shredded Monterey Jack cheese


Heat oven to 425 degrees F. Spray 12-inch pizza pan or 13x9-inch pan with nonstick cooking spray. Unroll dough; place in sprayed pan. Starting at center, press out dough with hands to edge of pan. Bake at 425 degrees F. for 7 to 9 minutes or until very light golden brown.
Meanwhile, heat oil in large skillet over medium-high heat until hot. Add chicken; sprinkle with chili powder, salt and garlic powder. Cook and stir 3 to 5 minutes or until lightly browned. Add onions and bell pepper strips; cook and stir an additional 2 to 3 minutes or until chicken is no longer pink and vegetables are crisp-tender.
Remove crust from oven. Spoon chicken mixture evenly over partially baked crust. Spoon salsa over chicken. Sprinkle with cheese.
Return to oven; bake an additional 14 to 18 minutes or until crust is golden brown.

Bell Pepper Nachos


2 medium green bell peppers
1 medium sweet red pepper
1 medium yellow bell pepper
2 ripe medium plum tomatoes, seeded and chopped
1/3 cup finely chopped onion
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 1/2 cups cooked rice
1/2 cup shredded Monterey Jack cheese
1/4 cup minced fresh cilantro or parsley
1/4 teaspoon hot pepper sauce
1/2 cup shredded sharp Cheddar cheese


Cut peppers into 1-1/2- to 2-in. squares. Cut each square in half diagonally to form two triangles; set aside. In a lightly greased skillet, cook the tomatoes, onion, chili powder and cumin over medium heat for 3 minutes or until onion is tender, stirring occasionally. Remove from the heat. Add rice, Monterey Jack cheese, cilantro and hot pepper sauce; stir well.
Spoon a heaping tablespoon onto each pepper triangle. Place on greased baking sheets Sprinkle with cheddar cheese. Broil 6-8 in. from the heat for 3-4 minutes or until cheese is bubbly and rice is heated through.

Resepi Ikan Bawal Pedas

Bahan:
500 gr bawal, bersihkan, kerat ekornya
1 sdm jus limau nipis
1 sdt garam
200 ml air- -
minyak goreng

Paste:
15 tangkai cili kering
5 tangkai cili api merah
5 bh bawang merah
2 ulas bawang putih
1 sdt garam

Cara Membuat:
1. Lumuri ikan dengan garam dan jus limau nipis, diamkan sebentar. Panaskan minyak, goreng bawal hingga kering dan masak, angkat, toskan.
2. Panaskan minyak goreng, tumis paste hingga harum. Masukkan air, masak hingga mendidih, masukkan ikan bawal, masak hingga masak dan bumbu meresap. Angkat dan sajikan. Untuk 4 orang

Resepi Acar timun masak

Bahan-bahan
( 4 orang )1 batang timun
1 batang lobak merah
2 ulas bawang putih
1/2 bawang besar
3 sudu besar cuka garam gula
1 cawan air
1/2 sudu kecil serbuk kunyit
1 sudu besar cili giling
1/2 sudu kecil biji sawi

Cara-cara
Belah 4 bawang putih. Mayang bawang besar Potong memanjang lobak merah dan timun. Rendam dalam air garam Panaskan minyak, tumis bawang putih Masukkan serbuk kunyit dan cili. Tumis sampai wangi. Masukkan air. Biar sampai mendidih Masukkan timun dan bahan-bahan lain. Jangan terlalu lama. Agak-agak 2-3 minit. Kemudian padamkan api.

Ingredients
4 Apple; unpeeled, thin sliced
3 Banana; peeled, thin sliced
3 Pear; unpeeled, thin sliced
2 Pineapple; fresh (with tops)
2 Strawberry; halved, -tops
1 1/2 lb Grape; halved, seeded
1 pt Kumquat
1 1/2 c Whipping cream
1 1/2 c Powdered sugar; sifted
4 ts Vanilla
1/4 ts Almond extract
2 qt Ice; finely crushed
3/4 c Almonds; toasted & slivered
3/4 c Fresh orange juice
1/4 c Kirsch


Instructions
1.
Sprinkle bananas, apples and pears with fresh lemon juice. Cut pineapples in half. Using curved serrated knife, hollow out pineapple halves, leaving 1/2" shell (reserve shells and all juice). Discard core. Cut pineapple into 1/4" cubes. Transfer to large bowl. Add sliced fruit* and toss lightly. Cover and refrigerate up to 2 hours.

For ice cream: Blend cream, powdered sugar and extracts in large bowl. Gradually fold in ice (or fresh clean snow) until mixture is consistency of ice cream. Fold in nuts. Add reserved pineapple juice to fruit. Blend in orange juice and kirsch. Spoon fruit into pineapple shells. Top with ice cream. Serve immediately.

* Can substitute any fresh seasonal fruit and combination of purple and green grapes and red and green apples.

Making Harvest Salad with Honey Dressing. This recipe is made up mostly of fruits and berries. It is a healthy recipe. It is also very good tasting too.

For this recipe, you will required the following ingredients: For the Dressing:
1. 1/2 cup of light whipping cream
2. 3 tbsp of raw honey
3. 3 tbsp of orange juice

Fruits used:
1. grapefruit sections
2. seedless green grapes
3. navel oranges
4. diced avocados
5. seedless red grapes
6. raspberries, strawberries or blackberries.

Method and instruction:

1. Firstly we will need to prepare the fruits. Start off by peeling the grapefruits and oranges. Next we need to slice the diced fruits into thin slices. Remember to take away all the white pith.
2. After that, arrange the fruits decoratively on a large platter. However, we will need to leave the centre empty. This is because we will put the dressing container there.
3. Scatter red and green grapes on the diced oranges and grapefruit. Next, arrange the berries. To do that, place a few in each group, around the edges of salad. Insert in slices of avocado randomly. A good choice is Kiwi fruit. It can be used here to add colour and taste to the salad.
4. Now, we need to prepare the dressing. Firstly, Chill the beaters and bowl. After that, we need to whip the chilled cream. We do so until it piles softly.
5. After that, blend honey with the orange juice. Beat the two mixtures together until they are well mixed.

No-Fail Baked Seafood Lasagna



3 tablespoons butter
3 tablespoons flour
3 cups milk
1/2 cup KRAFT 100% Grated Parmesan Cheese
1 (10 ounce) package frozen chopped spinach, thawed, drained
1 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1/8 teaspoon ground nutmeg
9 lasagna noodles, cooked, drained
1/2 pound fresh or thawed frozen cleaned medium shrimp, cooked
2 (6 ounce) cans crabmeat, drained, flaked

Preheat oven to 350 degrees F. Melt butter in large saucepan on medium heat. Add flour; stir with wire whisk until well blended. Gradually add milk, mixing well after each addition. Bring to boil on medium heat, stirring constantly. Reduce heat to low; simmer 3 to 5 min. or until thickened, stirring constantly. Remove from heat. Stir in Parmesan cheese; set aside. Combine spinach, cottage cheese, 2/3 cup of the mozzarella cheese and the nutmeg.
Spread 1/4 of the Parmesan cheese sauce onto bottom of 13x9-inch baking pan. Cover with 3 of the lasagna noodles and layers of 1/2 each of the shrimp, crabmeat and spinach mixture; top with 1/4 of the Parmesan cheese sauce. Repeat layers, starting with the noodles. Top with remaining 3 lasagna noodles, remaining Parmesan cheese sauce and the remaining 1/3 cup mozzarella cheese. Cover with foil.
Bake 25 min. Uncover; bake an additional 20 min. or until lasagna is heated through and top is lightly browned. Let stand 10 min. before cutting into 12 pieces to serve.

Chilli Bean Baked Potato recipe


Ingredients :

8 medium potatoes, washed
1 425g can chopped tomatoes
1 onion, chopped
1 teaspoon crushed garlic
1 425g can chilli beans

1 tablespoon olive oil

How to Prepare :
Prick the skin of the potatoes in several places and place them on some kitchen paper around the edge of your microwave turntable. Now cook the potatoes uncovered, on high for about 12 minutes or until they become tender. Or bake in a hot oven, at 200 degrees C, for about 1 hour or until tender.

Cut a cross in the top of each cooked potato and gently push inward to open. Spoon your toppings into and over the potatoes.

Filling:Heat olive oil in a pan and saute the onion and garlic until soft. Add your chilli beans, tomatoes and mix while heating through. Spoon this into your baked potato. Top with something like, grated cheese, grated carrot, diced tomatoes, diced cucumber, shredded lettuce and optionally top with lite sour cream.

Spicy Bean 'Quesadillas'


24 TRISCUIT Crackers
1/4 cup TACO BELL(R) HOME ORIGINALS(R) Refried Beans
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Colby & Monterey Jack Cheese
1/4 cup TACO BELL(r) HOME ORIGINALS(r) Thick 'N Chunky Salsa

Top each of 12 of the crackers with 1 tsp. refried beans, 2 tsp. cheese and 1 tsp. salsa. Cover with remaining crackers to form 'quesadillas.'
Place six topped crackers on microwaveable plate. Microwave on HIGH 15 to 20 sec. or until cheese is melted. Repeat with remaining topped crackers.

KARI IKAN ALA INDIA


Bahan-bahannya:-
1 ekor ikan tenggiri (anggaran 700g)
2 biji terung biru
8 - 10 batang kadang bendi
2 biji tomato
1/2 cawan pati santan
2 keping asam gelugor
2 camca besar rempah kari ikan "Babas"
Garam dan gula secukup rasa
Air secukupnya
Bahan-bahan dikisar halus:-
7 ulas bawang kecil merah
3 ulas bawang putih
2 inci halia
1 inci kunyit hidup
1 hirisan nipis lengkuas
1 cm belacan
4 tangkai cili merah
Bahan-bahan tumis:-
3 ulas bawang merah, dihiris halus
1 ulas bawang putih, dihirts halus
2 tangkai daun kari
1 camca teh halba campur (terdiri daripada halba, biji sawi dan jintan kasar)
Cara membuatnya:-
1- Terung dipotong dua dan dibelah 2, belah setiap bahagian tapi jgn putus, rendam dgn air garam 5 minit. Toskan. Cuci bendi dan buang hujung dan pangkalnya sedikit, cuci dan toskan. Goreng kedua2 jenis sayur dalam minyak panas selama 20 saat. Angkat, toskan minyak dan ketepikan.2- Panaskan kurang lebih 1/2 cawan minyak dalam periuk, tumis bahan2 tumis hingga wangi. Masukkan bahan2 kisar dan rempah kari, kacau goreng hingga wangi dan terbit minyak. Gunakan api sederhana.3- Tuang air secukupnya (anggaran 500ml), masukkan garam dan sedikit gula. Biarkan mendidih. Masukkan ikan dan asam gelugor. Biar mendidih perlahan dan tuangkan santan pekat tadi sambil dikacau perlahan. Akhir sekali masukkan tomato, bendi dan terung yang telah digoreng tadi. Biar mendidih sekejap dan boleh dihidangkan.

IKAN SUMBAT KELAPA



Bahan-bahannya:-
3 ekor ikan kembong hijau (jenis besar)
Bahan dikisar halus:-
4 ulas bawang merah kecil
2 ulas bawang putih
2 batang serai
2 biji buah keras
1 cm halia
1 cm belacan
1 camca teh ketumbar biji
1.5 cm kunyit hidup
Bahan lain:-
1/2 cawan kelapa parut putih
1/2 camca teh jus pekat asam jawa1
camca teh gula
1/4 camca teh garam
2 camca besar cili kisar
1 helai daun kunyit, dimayang halus
Cara membuatnya:-
1- Potong muncung ikan, tarik keluar insang dan isi perut ikan, berhati2 jgn perutnya terbelah. Kemudian belah belakang ikan perlahan2 hingga menjadi seakan2 poket. Cuci bersih, toskan dan lumur dgn sedikit garam dan kunyit. Ketepikan.2-Satukan bahan2 kisar dan bahan2 lain dan gaul hingga semua sebati dan mesra. Sumbat bahan2 tadi ke dalam ikan sehingga habis. Ikat dgn tali di tiga bahagian badan ikan (gunakan tali jenis cotton dan redam dalam air terlebih dahulu) seperti dalam gambar diatas.3- Bakar dalam oven pada suhu 190C, selama 20 minit. Lepas 10 minit terbalikkan ikan dan bakar lagi 10 minit. Buang tali pengikat sebelum dihidangkan.

IKAN GORENG LADA HIJAU


Bahan-bahannya:-
2 keping ikan goreng, asingkan isi dan tulangnya
Asam jawa sebesar ibu jari
1 inci belacanGaram, gula dan sedikit MSG
2 biji bawang besar, dihiris
2 ulas bawang putih, dihiris
8 - 10 tangkai lada hijau, dihiris
Cara membuatnya:-
1- Asam jawa dibancuh dengan 1/2 cawan air, ramas dan tapis jusnya. Tambah belacan dan hancurkan dgn jus asam jawa hingga larut. Ketepikan.
2- Dalam kuali, panaskan 2 camca besar minyak masak, tumis bahan2 yg dihiris hingga sedikit layu. Masukkan ikan dan juga bancuhan jus asam jawa dan belacan tadi. Gaul hingga rata. Gunakan api sederhana.
3- Tambah garam, gula dan sedikit MSG, gaul hingga rata dan rasa, jika kurang masin boleh ditambah lagi garam. Angkat dan hidangkan panas2 bersama nasi hangat atau pun bubur nasi.

ASAM PEDAS BERANGIN


Bahan-bahannya:-
3 keping daging ikan jenahak (boleh guna apa2 ikan yg disukai)
1 biji nenas (yg masak ranum)
2 kuntum bunga kantan
1 camca besar asam jawa + 1/2 cawan air, ramas dan tapis jusnya
3/4 cawan cili kisar
Garam dan gula secukupnya
Bahan-bahan ditumbuk halus:-
6 biji bawang merah kecil
3 ulas bawang putih
1 cm halia
1 cm kunyit hidup
1 cam belacan
1/2 camca teh lada hitam biji
1 camca teh garam kasar
Cara membuatnya:-
Cuci ikan dgn asam limau, bilas dan toskan. Kupas nenas, belah empat, buang empulur dan potong menyerong kasar2. Ketepikan.
Dalam periuk, tuang 5 camca besar minyak masak. Tumis bahan tumbuk dan juga cili kisar hingga naik bau dan terbit minyak. Masukkan nenas dan kacau goreng 1 - 2 minit.
Kemudian tuang 700 ml air, bila mendidih masukkan ikan dan juga bunga kantan, diikuti jus asam jawa. Perisakan dgn gula dan biar mendidih perlahan. Rasa kuahnya, jika perlu tambah sedikit lagi garam. Boleh dihidangkan bersama2 nasi hangat dan ulam2man...
