Bahan Utama:-
500 g ikan pari, potong, perap dengan limau dan garam 10 minit, cuci dan toskan
1/2 biji nenas masak ranum, buang empulur dan potong ketul2
2 kuntum bunga kantan
1 genggam daun kesum
2 keping asam gelugor1 camca besar asam jawa + 1/2 cawan air, ramas dan tapis jusnya
1/2 cawan cili kisar
1 camca besar rempah kari ikanGaram, gula dan serbuk perasa (jika suka)
500 ml air (atau mengikut keperluan)
Bahan Kisar:-
5 ulas bawang merah kecil
3 ulas bawang putih1 inci halia
1/2 inci lengkuas
3 biji buah keras
1/2 inci belacan
1 inci kunyit hidup
10 biji lada hitam
Cara membuatnya:-
Dalam periuk, tuang 1/2 cawan minyak dan tumis bahan2 kisar hingga terbit minyak. Masukkan cili kisar dan rempah kari. Kacau hingga rata. Tuang sedikit air dan terus menggoreng hingga rempah dan cili kering.
Masukkan potongan nenas dan goreng dengan rempah. Tuang air dan masukkan asam gelugor. Bila mendidih, masukkan ikan dan bunga kantan. Tuang jus asam jawa dan masukkan garam, gula dan serbuk perasa jika suka. Kacau dan biar mendidih.
Akhir sekali masukkan daun kesum dan rasa garamnya, jika kurang bolehlah ditambah. Hidangkan bersama nasi hangat dan ulam2man.
