RECIPE:GULAI PERANCIH


Bahan-bahan:
750 ml santan cair
250 ml santan pekat
1 batang serai (diketuk)
1 helai daun kunyit (disimpul)
2 helai daun limau purut
2 ikat pucuk ubi (direbus)
1 keping asam keping
10 gm ikan bilis (digoreng jangan terlalu garing)

Bahan-bahan untuk dikisar:
7 ulas bawang merah
2 ulas bawang putih
3 biji cili merah
1 cm kunyit
½ cm lengkuas
½ cm halia
garam secukup rasa

Cara membuatnya:
1.Didihkan santan cair.Masukkan rempah yang telah dihaluskan,serai,daun kunyit dan daun limau purut.Kacau sehingga masak dan berbau harum.
2.Masukkan pucuk ubi rebus,asam keping,ikan bilis dan santan pekat.Kacau agar santan tidak pecah minyak.Bila sudah masak matikan api dan sajikan.

NOTA:
*Selain ikan bilis boleh juga digunakan ikan kurau masin.Bakar dulu ikan kurau masin sebelum dimasukkan ke dalam santan.
*Pucuk ubi boleh juga digantikan dengan pucuk paku atau nangka muda.
